1.5–2 kg beef ribs
2 tbsp BBQ seasoning
1 tsp garlic powder
1 tsp smoked paprika

1.5 kg chicken wings
2 tbsp olive oil
1 tbsp garlic powder
1 tsp cayenne pepper (optional)

1 cup BBQ sauce
3. Smoked Sausages
4 large beef or pork sausages
4. Brisket Slices
1.5–2 kg beef brisket
2 tbsp mustard (for coating)
2 tbsp dry rub (paprika, pepper, garlic powder, brown sugar, salt)
Wood chips for smoking (optional)
Sides:
1. Baked Beans
2 cups canned baked beans
1 tbsp brown sugar
1 tsp mustard
1 small onion (finely chopped)
2. Macaroni & Cheese
2 cups cooked elbow macaroni
2 cups shredded cheddar
2 tbsp butter
2 tbsp flour
2 cups milk
Salt, pepper, and a pinch of nutmeg
3. Collard Greens
2 cups chopped collard greens
1 smoked meat piece (optional)
1 small onion (chopped)
2 cloves garlic
1 tbsp oil

1 cup cornmeal
1 cup flour
1/4 cup sugar
1 tbsp baking powder
1 egg
1 cup milk

Beef Ribs:
Rub ribs with seasoning.
Slow-cook in oven at 150°C (300°F) for 3–4 hours or smoke if possible.
Brush with BBQ sauce and broil/grill for 10 minutes.
Chicken Wings:
Marinate with spices and oil for at least 1 hour.
Bake or grill at 200°C (400°F) for 35–40 mins, flipping halfway.
Toss in BBQ sauce and grill for extra caramelization.
Sausages:
Grill or pan-fry sausages until golden brown and fully cooked.
Brisket:
Rub brisket with mustard and seasoning.
Smoke or roast at 120°C (250°F) for 6–8 hours, wrapped in foil for last half.
Let it rest, then slice thinly.
Baked Beans:
In a small pot, fry onions in oil until soft.
Add beans, sugar, and mustard. Simmer for 10–15 mins.
Mac & Cheese:
Make a roux with butter and flour, slowly whisk in milk.
Add cheese and stir until smooth.
Mix with macaroni, bake if desired for a crust.
Collard Greens:
Sauté onions and garlic, add chopped greens.
Add smoked meat if using and simmer until tender (20–30 mins).
Cornbread:
Mix dry ingredients, then add milk, egg, and butter.
Pour into greased muffin tray or pan.
Bake at 180°C (350°F) for 20–25 mins until golden.
