Cheesy Cauliflower Fritters
Ingredients:
- 1 medium head of cauliflower, cut into florets
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Vegetable oil for frying
Instructions:
1. **Prepare the Cauliflower:**
- Bring a large pot of salted water to a boil.
- Add the cauliflower florets and cook until tender, about 5 minutes.
- Drain the cauliflower and let it cool slightly, then chop it into small pieces.
2. **Make the Fritter Mixture:**
- In a large bowl, combine the chopped cauliflower, cheddar cheese, Parmesan cheese, parsley, flour, beaten eggs, garlic powder, salt, and pepper. Mix until well combined.
3. **Form the Fritters:**
- Take about 2 tablespoons of the mixture and shape it into a small patty. Repeat with the remaining mixture.
4. **Fry the Fritters:**
- Heat vegetable oil in a large skillet over medium heat.
- Fry the fritters in batches, flattening them slightly with a spatula, until golden brown and crispy, about 3-4 minutes per side.
- Remove the fritters from the skillet and drain on paper towels.
5. **Serve:**
- Serve the fritters hot with your favorite dipping sauce.
