Cinnamon roll peach cobbler


 

Ingredients:


2 cans of refrigerated cinnamon rolls (8 rolls per can)


4 cups fresh or canned peaches (drained if using canned)


1/4 cup granulated sugar


1 tablespoon cornstarch


1 teaspoon ground cinnamon


1/2 teaspoon vanilla extract


1 tablespoon lemon juice (optional)


1/4 teaspoon salt


1 tablespoon butter (melted)


1/4 cup heavy cream (optional)



Instructions:


1. Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.



2. Prepare the peaches: If using fresh peaches, peel, pit, and slice them. In a bowl, toss the peaches with granulated sugar, cornstarch, cinnamon, vanilla extract, salt, and lemon juice (if using). Stir to combine and let them sit while preparing the cinnamon rolls.



3. Cut the cinnamon rolls: Open the cans of cinnamon rolls, and cut each roll into quarters. Set aside the icing for later.



4. Assemble the cobbler: Spread the peach mixture evenly into the bottom of the prepared baking dish. Place the quartered cinnamon rolls on top of the peaches.



5. Add butter and cream (optional): Drizzle the melted butter over the cinnamon rolls. For an extra creamy topping, drizzle a little heavy cream over the cinnamon rolls as well.



6. Bake: Place the baking dish in the preheated oven and bake for 35-45 minutes or until the cinnamon rolls are golden brown and cooked through, and the peach mixture is bubbling around the edges.



7. Finish with icing: While the cobbler is baking, you can optionally heat the cinnamon roll icing in the microwave for about 10-15 seconds to make it easier to drizzle. Once the cobbler is done baking, drizzle the icing over the top of the cobbler.



8. Serve and enjoy: Let the cobbler cool for a few minutes before serving. This is perfect served with a scoop of vanilla ice cream or whipped cream.
