 Creamy Potato Bacon Soup in a Slow Cooker


Ingredients

- 6 slices of bacon, cut into 1/2 inch pieces

- 1 onion, finely diced

- 2 cans (10.5 ounces each) of condensed chicken broth

- 2 cups of water

- 5 large potatoes, peeled and chopped

- 1/2 teaspoon of salt

- 1/2 teaspoon of dried dill weed

- 1/2 teaspoon of ground white pepper

- 1/2 cup of all-purpose flour

- 2 cups of half-and-half cream

- 1 can (12 fluid ounces) of evaporated milk


Preparation

Step 1

In a large skillet over medium-high heat, cook the diced bacon and chopped onion until the bacon becomes crispy and the onions are tender. Drain any excess grease.


Step 2

Transfer the cooked bacon and onion mixture to a slow cooker. Add the condensed chicken broth, water, diced potatoes, salt, dried dill weed, and ground white pepper. Mix thoroughly.


Step 3

Cover the slow cooker and set it to Low heat for 6 to 7 hours, stirring occasionally, until the potatoes are soft.


Step 4

In a small bowl, combine the all-purpose flour and half-and-half, whisking until smooth.


Step 5

Add this mixture to the slow cooker along with the evaporated milk. Stir well to ensure even distribution.


Step 6

Replace the cover on the slow cooker and continue cooking for an additional 30 minutes on Low heat.


Step 7

Once the soup is heated through and has reached a creamy consistency, it is ready to be served.
