Creamy Potato Bacon Soup in a Slow Cooker
Ingredients
- 6 slices of bacon, cut into 1/2 inch pieces
- 1 onion, finely diced
- 2 cans (10.5 ounces each) of condensed chicken broth
- 2 cups of water
- 5 large potatoes, peeled and chopped
- 1/2 teaspoon of salt
- 1/2 teaspoon of dried dill weed
- 1/2 teaspoon of ground white pepper
- 1/2 cup of all-purpose flour
- 2 cups of half-and-half cream
- 1 can (12 fluid ounces) of evaporated milk
Preparation
Step 1
In a large skillet over medium-high heat, cook the diced bacon and chopped onion until the bacon becomes crispy and the onions are tender. Drain any excess grease.
Step 2
Transfer the cooked bacon and onion mixture to a slow cooker. Add the condensed chicken broth, water, diced potatoes, salt, dried dill weed, and ground white pepper. Mix thoroughly.

Cover the slow cooker and set it to Low heat for 6 to 7 hours, stirring occasionally, until the potatoes are soft.
