CRÈME BRÛLÉE CHEESECAKE BARS
Ingredients:
- 1 ½ cups graham cracker biscuit crumbs
- ½ cup melted unsalted butter
- ⅓ cup sugar for the crust mixture
- 2 (8 oz) packages of softened cream cheese
- ¾ cup sugar for the cheesecake filling
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon pure maple syrup
- ½ cup heavy whipping cream
- Additional sugar for the burnt topping
Directions:
1. Start by setting your oven temperature to 325°F (160°C). Line a square 9x9 inch baking dish with parchment paper, allowing enough to extend over the sides for easy removal after baking.
2. In a mixing bowl, stir together the graham cracker crumbs, softened butter, and ⅓ cup of sugar until it's well combined and resembles wet sand. Press this mixture firmly into the base of your prepared baking dish for a solid crust.
3. In a larger bowl, beat the cream cheese until it’s smooth and creamy using either an electric mixer or whisk. Gradually add in ¾ cup sugar while continuing to mix until fluffy, which should take around 3 to 4 minutes.
4. Add the eggs, mixing one at a time until fully blended. Incorporate both the vanilla and maple syrup, mixing until just mixed to prevent over-aeration.
5. Finally, gently incorporate the heavy cream until fully combined. Pour over the crust and smooth with a spatula.
6. Place in the oven and bake for 35-40 minutes or until the edges are set and there's a slight jiggle in the center. After baking, turn off the oven and keep the cheesecake inside for an additional 30 minutes for gradual cooling, which will help minimize cracks.
7. Allow the bars to chill in the fridge for at least 4 hours, preferably overnight, to set properly.
8. For a beautiful caramelized topping, sprinkle an even layer of granulated sugar on the surface of the chilled cheesecake. Lightly torch the sugar until it turns a rich golden color. If you do not have a torch, you can use the broiler of your oven to achieve this, making sure to monitor it closely.
9. Allow the caramelized layer to harden for about 10 minutes before lifting out of the pan using the parchment paper overhang. Cut into squares, and serve chilled.
