Smothered Hamburger Steak
Ingredients
For the patties:
1 ½ lbs ground beef (80/20 blend works best)
½ cup plain breadcrumbs
1 egg
1 small onion, finely chopped
1 tsp garlic powder
1 tsp onion powder
1 tsp Worcestershire sauce
Salt & black pepper to taste
For the onion gravy:
1 large onion, thinly sliced
2 tbsp butter
2 tbsp all-purpose flour
2 cups beef broth
1 tsp Worcestershire sauce
Salt & pepper to taste
---
Instructions
1. Make the patties:
In a large bowl, mix ground beef, breadcrumbs, egg, chopped onion, garlic powder, onion powder, Worcestershire, salt, and pepper.
Form into 4–6 oval patties.
2. Sear the patties:
Heat a cast iron skillet or large frying pan over medium-high heat. Add a touch of oil.
Sear patties for 3–4 minutes per side until browned. Remove and set aside (they’ll finish cooking in the gravy).
3. Make the gravy:
In the same skillet, melt butter. Add sliced onions and cook 5–7 minutes until soft and golden.
Sprinkle flour over onions and stir constantly for 1–2 minutes to form a roux.
Slowly whisk in beef broth and Worcestershire. Simmer until thickened, about 5 minutes.
4. Smother the steaks:
Return patties to the skillet, nestling them into the gravy.
Cover and simmer on low heat for 15–20 minutes, or until patties are fully cooked and tender.
---
Pro Tips:
For deeper flavor, deglaze the skillet with a splash of red wine or extra Worcestershire before adding broth.
Don’t overmix the beef—just until combined for tender patties.
