Instructions:
1. Prepare the Pecans:
Preheat your oven to 350°F (175°C).
Spread the pecans evenly on a baking sheet and toast them for about 8-10 minutes until fragrant. Let them cool.
2. Make the Caramel:
In a medium saucepan, combine the butter, brown sugar, corn syrup, and sweetened condensed milk.
Cook over medium heat, stirring constantly, until the mixture comes to a boil.
Reduce heat to low and continue cooking, stirring frequently, until the caramel thickens (about 5-7 minutes). Use a candy thermometer if desired; it should reach about 235°F (soft ball stage).
Remove from heat and stir in the vanilla extract.
3. Assemble the Clusters:
On a parchment-lined baking sheet, arrange small piles of toasted pecans (about 4-5 pecans per cluster).
Spoon a small amount of caramel over each pile, ensuring the pecans stick together. Allow the caramel to cool and set.
4. Add the Chocolate:
Melt your favorite type of chocolate (milk, dark, or semi-sweet) in a microwave-safe bowl in 20-30 second increments, stirring each time until smooth.
Spoon or drizzle the melted chocolate over each cluster, covering the caramel and pecans.
Allow the clusters to cool completely until the chocolate sets.
Tips:
Store the clusters in an airtight container at room temperature for up to a week (if they last that long!).
For an extra touch, sprinkle a pinch of sea salt on top before the chocolat
