Asparagus-Stuffed Chicken Breasts


Ingredients:


4 boneless, skinless chicken breasts


1 bunch of asparagus (trimmed)


1 cup shredded mozzarella cheese


1 teaspoon garlic powder


1 teaspoon onion powder


1 teaspoon paprika


½ teaspoon salt


½ teaspoon black pepper


½ teaspoon Italian seasoning


2 tablespoons olive oil


2 tablespoons unsalted butter


2 cloves garlic (minced)


½ teaspoon red pepper flakes (optional)


1 tablespoon lemon juice


1 tablespoon fresh parsley (chopped, for garnish)


Toothpicks



Instructions:


1. Preheat Oven: Preheat your oven to 375°F (190°C).



2. Prepare the Chicken:


Lay the chicken breasts on a cutting board. Using a sharp knife, cut a pocket into the side of each breast, being careful not to slice all the way through.


Season the inside and outside of each chicken breast with garlic powder, onion powder, paprika, salt, black pepper, and Italian seasoning.




3. Stuff the Chicken:


Place 3-4 asparagus spears inside each chicken breast.


Sprinkle ¼ cup of shredded mozzarella inside each pocket.


Secure the opening with toothpicks to prevent the filling from spilling out.




4. Sear the Chicken:


Heat olive oil in a large oven-safe skillet over medium heat.


Add the stuffed chicken breasts and sear for 3-4 minutes per side until golden brown.




5. Bake the Chicken:


Add butter, minced garlic, and red pepper flakes to the skillet. Let it melt and spoon over the chicken.


Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the internal temperature reaches 165°F (75°C).




6. Finishing Touches:


Remove the chicken from the oven and drizzle with lemon juice.


Garnish with chopped fresh parsley.


Let the chicken rest for 5 minutes before serving.





Serving Suggestions:


Serve with garlic mashed potatoes, roasted sweet potatoes, or a fresh salad.


Drizzle with a light honey mustard sauce for extra

 flavor.
