Ingredients (1–2 servings):
1 egg
2 tbsp unsweetened shredded coconut
1 tbsp coconut flour (or more shredded coconut if unavailable)
1 tbsp coconut oil (melted) or butter
1–2 tbsp honey or maple syrup (optional, natural sweetener)
1/2 tsp vanilla extract
1/4 tsp baking powder

Instructions:
1. Mix wet ingredients:
In a microwave-safe mug or small bowl, whisk together the egg, coconut oil, vanilla extract, and honey.
2. Add dry ingredients:
Stir in the shredded coconut, coconut flour, baking powder, and salt. Add milk if the batter seems too thick.
3. Microwave:
Microwave on high for 1 minute 30 seconds to 2 minutes, or until the top is set and a toothpick comes out clean.
