CHERRY BARS :
INGREDIENTS:
3/4 cup light butter
1 cup brown sugar
1 egg
1 teaspoon vanilla
1 cup whole wheat flour
1 cup white flour
2 tablespoons white flour
2 cups oat flakes
1 cup cherry spread (Double Fruit type)
In a large bowl, beat the butter and brown sugar with an electric mixer until light and fluffy. Beat the eggs and vanilla. In a separate bowl, mix whole wheat flour, white flour and baking powder. Add as much dry ingredients as possible tothe butter mixture and beat on low speed. Using a wooden spoon, mix the remaining dry ingredients and oatmeal.
Save 125 ml of the oatmeal mixture. Press remaining mixture into lightly greased 13″ x 9″ pan. Spread with cherry paste. Sprinkle with oatmeal mixture.
