Crock Pot Chicken and Dumplings


 Ingredients:


1 onion, diced


6 boneless, skinless chicken thighs


1 can cream of chicken soup


1 can cream of celery soup


2 tbsp fresh parsley, chopped


1 tsp poultry seasoning


2 cups chicken broth



Instructions:


1. Prepare the base:

Place the diced onion in the bottom of your crock pot. Lay the chicken thighs on top.



2. Mix the soups:

In a bowl, mix the cream of chicken soup, cream of celery soup, poultry seasoning, and chicken broth until smooth. Pour this mixture over the chicken and onions.



3. Cook:

Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.



4. Add dumplings:

About 1 hour before serving, prepare your dumplings. You can use refrigerated biscuit dough, cutting each biscuit into quarters, or make your own dumpling dough. Drop the dumplings into the crock pot, ensuring they rest on top of the mixture. Cover and cook for another hour, or until the dumplings are fluffy and cooked through.



5. Garnish and serve:

Stir in the fresh parsley and serve warm. Enjoy the hearty, comforting flavors!
