flavorful and healthy cabbage soup:
Ingredients
1 large cabbage, chopped
2 small onions, diced
2 cans (14.5 oz each) of stewed tomatoes
3 large carrots, sliced
3 celery stalks, sliced
1 bell pepper, diced (optional)
2-3 garlic cloves, minced
6 cups of vegetable broth (or chicken broth)
1 tablespoon olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon paprika
Salt and pepper to taste
Optional: A dash of red pepper flakes for spice
Instructions
1. Prepare the Vegetables: Wash and chop all vegetables.
2. Sauté the Onions and Garlic: Heat olive oil in a large pot over medium heat. Add diced onions and garlic, sauté for 3-4 minutes until softened and fragrant.
3. Add the Vegetables: Add the carrots, celery, and bell pepper to the pot. Stir and cook for another 5 minutes.
4. Combine Broth and Tomatoes: Pour in the vegetable broth and add the stewed tomatoes (with their juices). Stir to combine.
5. Add Cabbage: Stir in the chopped cabbage.
6. Season: Add oregano, basil, paprika, salt, and pepper. If using, add a dash of red pepper flakes for a kick.
7. Cook the Soup: Bring the mixture to a boil, then reduce heat to low. Cover the pot and simmer for 20-30 minutes, or until the vegetables are tender.
8. Taste and Adjust: Taste the soup and adjust seasoning as needed.
9. Serve: Serve hot, garnished with fresh parsley if desired.
