Homemade Turtle Candy with Pecans and Caramel
Ingredients
Makes about 24 turtles
2 cups pecan halves (lightly toasted for best flavor)
1 (11 oz) bag soft caramels (like Werther’s Soft Caramels or Kraft)
2 tablespoons heavy cream
2 cups semi-sweet or milk chocolate chips
1 tablespoon coconut oil or butter (optional, for smoother chocolate)

Instructions
1. Prepare a Tray
Line a baking sheet with parchment paper or a silicone mat. Arrange clusters of 3-4 pecan halves in a “Y” or star shape. These will form the turtle’s legs.
2. Make the Caramel
In a microwave-safe bowl, combine caramels and heavy cream. Microwave in 30-second intervals, stirring each time, until smooth (about 2 minutes total).
3. Add Caramel to Pecans
Spoon about 1 heaping teaspoon of warm caramel onto the center of each pecan cluster. Let sit at room temperature for 10–15 minutes to firm up slightly.
4. Melt the Chocolate
In another bowl, microwave the chocolate chips and coconut oil (if using) in 30-second intervals, stirring until smooth and glossy.
5. Top with Chocolate
Spoon melted chocolate over each caramel cluster, just enough to cover the caramel. Let a little caramel and pecan peek out for that classic “turtle” look.
6. Chill and Set
Place tray in the refrigerator for about 30 minutes, or until the chocolate is firm.
