Ingredients


1 pie crust (homemade or store-bought)


1 3/4 cups sugar


1 cup pecans, roughly chopped


1 cup crushed pineapple, drained


1 cup shredded coconut


1/2 cup (1 stick) unsalted butter, melted


5 eggs, room temperature


1 tablespoon cornstarch


1 tablespoon all-purpose flour


1/4 teaspoon salt

Instructions: How to Make Island Pecan Pie


1. Preheat oven to 300ºF (150ºC).



2. In a large mixing bowl, whisk together the sugar, eggs, cornstarch, flour, and salt until smooth and fully combined.



3. Stir in the melted butter, then gently fold in the pecans, drained pineapple, and coconut until evenly distributed.



4. Place your pie crust in a 9-inch round pie dish and pour the filling into the crust. Crimp the edges if desired.



5. Bake uncovered for 55 minutes, or until the filling is mostly set with just a slight jiggle in the center.



6. Cover loosely with aluminum foil and bake for an additional 15–20 minutes, or until the center is just set and the top is golden.



7. Remove from the oven and allow to cool completely before slicing.
