Traditional Yorkshire Puddings
Ingredients:
1 cup all-purpose flour
1 cup whole milk
3 large eggs
1/2 tsp salt
Beef drippings or vegetable oil (for the tin)
---
Instructions:
1. Make the batter:
In a bowl, whisk the eggs, milk, and salt together.
Slowly whisk in the flour until the batter is smooth and lump-free.
Let it rest at room temperature for 30 minutes to 1 hour (or refrigerate up to overnight).
2. Preheat the oven:
Heat oven to 450°F (230°C).
Put a little beef drippings or oil into each cup of a muffin or Yorkshire pudding tin.
Place the tin in the oven to heat for 5–10 minutes, until the fat is smoking hot.
3. Bake:
Quickly pour the batter into the hot tin, filling each cup about 1/3 full.
Bake for 20–25 minutes, do not open the oven door during baking.
They should puff up dramatically and turn golden brown.

Pro Tips:
A hot oven and hot fat are key for a big rise.
Don’t overfill the cups—this helps with that signature "bowl" shape.
Serve immediately for best texture.
