Mexican Tortilla Casserole
An easy, cheesy, crowd-pleasing casserole with bold Tex-Mex flavors.
Ingredients
1 lb ground beef
1/2 cup diced onion
1 packet taco seasoning mix
2 cups shredded cheddar cheese
1 can refried beans (microwave slightly to soften)
1 cup cooked rice (e.g., Minute Rice)
1/2 can Mexican-style corn, drained
4–5 large flour tortillas
8 oz thick, chunky salsa (mild or hot to taste)
Optional toppings: sour cream, diced onion, shredded lettuce

Instructions
1. Prep the Pan:
Spray a round springform pan, cake pan, or casserole dish with non-stick spray.
2. Cook the Filling:
In a skillet, brown ground beef and diced onion. Drain excess fat.
Stir in taco seasoning and prepare as directed on the packet.
3. Assemble the Layers:
Layer 1: Place one tortilla on the bottom. Spread 1/3 of the refried beans, 1/3 of the meat, and sprinkle with cheese.
Layer 2: Tortilla, 1/2 the rice, 1/2 the salsa, 1/2 the corn, and cheese.
Layer 3: Tortilla, 1/3 beans, 1/3 meat, and cheese.
Layer 4: Tortilla, remaining beans and meat, rest of the corn, rice, salsa, and top with cheese.
4. Bake:
Cover with foil and bake at 350°F (175°C) for 40 minutes.
Uncover and bake an additional 10–15 minutes until bubbly and lightly browned.
5. Rest & Serve:
Let rest for 5 minutes before slicing.
Top with
sour cream, diced onion, and shredded lettuce if desired.
