 Sausage Breakfast Muffins


These warm, hearty muffins are packed with savory sausage, cheese, and eggs, making them a satisfying and portable breakfast option. Simple to make and easy to love!


Ingredients:


1 lb breakfast sausage


1 cup shredded cheddar cheese (or your favorite cheese)


1½ cups all-purpose flour


1 tablespoon baking powder


½ teaspoon salt


¼ teaspoon black pepper


1 cup milk


2 large eggs


Optional: chopped green onions or bell peppers for extra flavor

Instructions:


1. Preheat oven to 375°F (190°C). Lightly grease a 12-cup muffin tin or line with paper liners.



2. Cook the sausage in a skillet over medium heat, breaking it up with a spoon until fully browned and no longer pink. Drain any excess grease and let cool slightly.



3. In a large bowl, whisk together the flour, baking powder, salt, and pepper.



4. In a separate bowl, beat the eggs and milk together until well combined.



5. Add the sausage and shredded cheese to the dry ingredients and mix to distribute evenly.



6. Pour the egg mixture into the dry ingredients and stir just until combined. If using green onions or peppers, fold them in now.



7. Spoon the batter evenly into the prepared muffin tin.



8. Bake for 20–25 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.



9. Cool slightly before serving. Enjoy warm, or cool completely and refrigerate or freeze for later.
