Shrimp and Sausage Foil Packet Dinner
Ingredients:
1 lb large shrimp, peeled and deveined
1 lb smoked sausage, sliced into 1/2-inch pieces
2 bell peppers (any color), chopped
1 large red onion, chopped
2 cloves garlic, minced
2 ears of corn, cut into 4 pieces each (8 total pieces)
2 tbsp olive oil
1 tsp smoked paprika
1/2 tsp cayenne pepper (optional for heat)
Salt and black pepper, to taste
1 tbsp Old Bay seasoning (or Cajun seasoning)
1 lemon, cut into wedges (for serving)
Fresh parsley, chopped (for garnish)

Instructions:
1. Preheat grill or oven:
Grill: Heat to medium-high (about 400°F / 200°C).
Oven: Preheat to 400°F (200°C).
2. Prepare the packets:
In a large bowl, combine shrimp, sausage, bell peppers, red onion, corn pieces, and minced garlic.
Drizzle with olive oil and sprinkle with paprika, cayenne (if using), Old Bay seasoning, salt, and pepper. Toss to coat everything evenly.
3. Assemble the foil packets:
Tear off 4 large sheets of heavy-duty foil (about 12–16 inches each).
Divide the mixture evenly among the sheets, placing the ingredients in the center of each.
Fold the long sides over the mixture, then roll the edges tightly to seal, forming a packet.
4. Cook:
Grill: Place packets directly on the grill grates. Cook for 15–18 minutes, turning halfway through, until shrimp are opaque and corn is tender.
Oven: Place packets on a baking sheet and bake for 18–20 minutes.
5. Serve:
Carefully open the packets (watch for steam).
Garnish with fresh parsley and serve with lemon wedges.
