Classic 7UP Pound Cake Recipe
Ingredients:
3 sticks (1½ cups) unsalted butter, room temperature
3 cups granulated sugar
5 large eggs
3 cups all-purpose flour, sifted
2 teaspoons lemon extract (or 1 tsp lemon + 1 tsp vanilla for a milder lemon flavor)
¾ cup 7UP (not diet) — room temperature
Optional Glaze:
1 cup powdered sugar
2–3 tablespoons lemon juice or 7UP

Instructions:
1. Preheat oven to 325°F (165°C).
Grease and flour a 10-inch bundt pan thoroughly.
2. Cream the butter and sugar:
In a large mixing bowl, beat butter and sugar together on medium speed until very light and fluffy (about 5–7 minutes). Don't skimp on this step — it's key for a light texture.
3. Add eggs one at a time, beating well after each addition.
4. Add flour gradually, mixing just until incorporated. Do not overmix.
5. Stir in lemon extract and slowly add the 7UP. Mix until smooth.
6. Pour batter into the prepared bundt pan and smooth the top.
7. Bake for 70–80 minutes, or until a toothpick inserted in the center comes out clean. The top should be golden brown and slightly cracked.
8. Cool in pan for 10–15 minutes, then invert onto a wire rack to cool completely.
