Ingredients:


1 lb (450 g) chicken breast, finely chopped or ground


1 cup shredded mozzarella cheese


2 large eggs


3 tablespoons all-purpose flour (or almond flour for a low-carb option)


2 tablespoons mayonnaise


1 clove garlic, minced


1/4 cup chopped fresh parsley or green onions


1/2 teaspoon salt


1/4 teaspoon black pepper


Oil for frying (vegetable, canola, or olive oil)



Instructions:


1. Prepare the mixture:


In a large mixing bowl, combine the chopped chicken, mozzarella cheese, eggs, flour, mayonnaise, garlic, parsley, salt, and pepper. Mix until well combined.




2. Form the fritters:


Heat a non-stick skillet over medium heat and add enough oil to lightly coat the bottom.


Using a spoon, scoop the chicken mixture and drop it into the pan, flattening slightly to form a patty.




3. Cook the fritters:


Fry the fritters for 3-4 minutes on each side, or until golden brown and cooked through. Avoid overcrowding the pan; cook in batches if needed.




4. Serve:


Transfer to a plate lined with paper towels to drain excess oil. Serve warm with your favorite dipping sauce, such as sour cream, ranch, or spicy mayo.
