Cucumber Salad


 

Refreshing Cucumber Salad


A light, crisp, and flavorful salad perfect as a side dish or a refreshing snack!


Ingredients:


3 baby cucumbers, thinly sliced


1 small carrot, peeled and diced


1 tomato, diced


2 tbsp red onion, finely chopped (optional, for extra flavor)


1 tbsp fresh cilantro or parsley, chopped


1 tbsp olive oil


1 tbsp lemon juice or vinegar


½ tsp salt


¼ tsp black pepper


½ tsp sugar or honey (optional, to balance acidity)



Instructions:


1. Prepare the vegetables – Slice the cucumbers thinly, dice the carrot and tomato, and chop the onion and herbs.



2. Mix the dressing – In a small bowl, whisk together olive oil, lemon juice (or vinegar), salt, pepper, and sugar/honey if using.



3. Combine – Toss all the ingredients in a mixing bowl, ensuring everything is evenly coated with the dressing.



4. Chill & Serve – Let the salad sit for 10-15 minutes for the flavors to meld, then serve fresh!




Pro Tips:


✅ Use English cucumbers if you don’t have baby cucumbers.

✅ Add feta cheese or avocado for a creamy twist.

✅ A pinch of red pepper flakes adds a little heat!
