For The Cake

5 pounds red potatoes, thinly sliced or cubed

Instructions


1. Preheat the oven to 400°F (200°C).

Grease a 9×13-inch baking dish or large roasting pan.



2. Assemble the layers:

Spread the potatoes evenly in the prepared baking dish. Sprinkle the chopped onion and bacon over the top.



3. Add the butter:

Dot the top with diced butter, distributing it as evenly as possible over the dish.



4. Season:

Sprinkle with salt and pepper to taste.



5. Bake uncovered for 45 to 55 minutes, or until the potatoes are tender and golden brown, and the bacon is crisp. Stir halfway through baking for even browning and crispier edges.
